Climbing Gold Mountain

Climb Gold Mountain formerly was called Climbing Straw Stem in Shunde dialect, whose original intention was that when people burned the firewood, they had a pile of straw into a heap, and straw several pieces out from the bottom, which was the similar way to have fish slide. Thus it was called Climbing Straw Stem, later renamed as Climbing Gold Mountain.


The fish slide in the dish Climbing Gold Mountain is piled in the center of the iron plate, like a mountain. There is boiled water around the plate, and the slide can be scooped down to boiled in the water. Fish slide is made of over 10 cm long dace whose flesh is cut into thin and small flakes, mixed with salt and pepper and other spices. With boiling water to cook the fish slide, it can maximize the dace's flavor.
